A Muffin That Isn’t Like Cake: Egg Muffins

Let’s be honest, most muffins are glorified cake. Most of them are around 400 calories and not very filling at all. Instead of eating “cake” for breakfast, try this recipe – a healthy muffin option. This is a great recipe to make on the weekend for a “grab and go” options during the week for breakfast, or a snack during the day. One of the tricks to eating healthy is making the healthy option the easy options, this recipe helps you do just that.

Prep time: 10 mins  I  Cook time: 20 mins I Total time: 30 mins  I Serves: makes 8 muffins

The following makes 12 servings:

  • 4 eggs
  • 1 1/2 cup egg whites
  • 1/2 cup low fat feta cheese
  • salt and pepper to taste

Combination of 2 cups of add-in’s (vegetables and meat), here’s what I often use:

  • 1/2 cup cut up spinach
  • 1/4 diced onions
  • 1/2 cup deli meat black forest ham
  • 1/4 cup diced red bell pepper

Nutritional Information (per muffin): 

148 calories | 19g Protein| 6g Fat | 4g Carbs

Notes about recipe:

  • I typically pop 2 of these guys in the microwave the morning of for a quick breakfast. But they can also be eaten as a snack during the day.
  • As mentioned in the instruction, very important to either use muffin tins or grease the muffin tray very well.
  • You can use any combination of Add-in’s, just make sure you stick to 2 cups
  • The other recipe I make, that is like this one, is Egg Frittatas – I find this recipe bother easier to make and to clean up.
