Slow Cooker Chicken Carrots and Potatoes
This is a great recipe that is simple and easy to make, ideal for someone who is busy and who doesn’t have time to cook. Prep and start before you leave your house – or don’t leave your house haha – (4 hours for fast, 8 hours for low cook setting) and by the time you’re back it’s ready!
Prep time: 10 mins I Cook time: 4-8 hours (depends on what slow cooker setting you use, 4 for High and 6-8 for Low) I Total time: 4-8 hours I Makes 4 servings
Main Ingredients:
- 1.5 lbs. boneless skinless chicken breasts
- 1 lb. bag baby carrots
- 1.5 lbs. Yukon gold potatoes (cut into wedges)
- 1/4 cup salted butter (melted)
- 1 Tbsp. minced garlic
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. dried thyme
- 1 tsp. dried parsley

- Feel free to use more, or other vegetables than carrots and potatoes. My recommendation: keep the ratio of 3lbs total vegetables to 1.5lbs. chicken
