The below is the ingredients necessary for batch cooking to make 5 servings

  • 1/2 cup Salsa
  • 1/2 can (540 ml) of corn, drained
  • 1/2 can (540 ml) of black beans, drained

Recipe notes:

  • When you are initially putting the sweet potatoes on the baking sheet it might look like there isn’t enough room. The potatoes will shrink, so don’t worry – smush them together.
  • It’s easy to use more than 1 cup of cheddar cheese so be mindful of this is you’re trying to keep this recipe lower in calories.
  • Ways to reduce the calories in this recipe: use 3/4 to 1/2 of the cheese (or don’t use any at all? But…that would be less fun), use a leaner meat option (chicken, turkey), increase amount of black beans and corn while reducing amount of sweet potato and/or lean ground beef.
