Super Simple Spinach Salad

How about that for an alliteration? This is less of a “recipe” and more instructions of what to throw into a bowl for a quick and healthy side salad that is Popeye approved and a great accompaniment to your main dish.

Prep time: 2 mins  I Cook time: 0 mins I Total time: 2 mins  I Serves: 1

Main Ingredients:

    • 3 Cups (90g) Baby Spinach Hearts
    • 1/8 cup crushed nuts (can be any combination of pecans, walnuts, and almonds, or just 1/8 cup of one of them)
    • 3 Tbsp lite Vinaigrette

*1/8 cup crushed nuts is roughly 16g. Aim for 100 calories from nuts, for almonds this around 14 almonds. Also, I like the Raspberry Vinaigrette as opposed to regular balsalmic.

Nutritional Information: 

211 calories | 8g Protein | 12g Fat | 21g Carbs

Notes about recipe:

  • You can scale this recipe up or down as needed, as well as add in other things like fresh fruit (strawberries, raspberries, mandarin oranges, etc.)
  • Be mindful of how much nuts and or dressing you use, as this can quickly increase the amount of calories here.
  • You can also use 50/50 spring mix, instead of just spinach, to help you use is before it goes bad…
