Protein Peanut Butter Cookies

Something worth stating: there is nothing wrong with eating normal peanut butter cookies.

However, I like to play around with recipes and see If I can do things to make recipes healthier, like reducing sugar content, or simpler, like reducing steps and/or ingredients needed – all the while having a finished product that tastes good.

This recipe is one such recipe, that has more protein and less sugar, fat, and calories than a traditional peanut butter cookie.

These cookies are grain-free by the way *celiac and gluten-intolerant people cheering*

Prep time: 5 mins  I  Cook time: 10 mins I Total time: 15 mins  I Serves: makes 12 cookies

Main Ingredients:

  • 1 cup Peanut Butter – Kraft creamy smooth, or natural Peanut butter
  • ⅔ cup sugar
  • 1 egg, large
  • 2 scoops (1/2 cup) vanilla protein powder

Nutritional Information (per cookie, based on 12 cookies being made): 

126 calories | 5g Protein| 7g Fat | 11g Carbs

Notes about recipe:

  • Cookies will look soft when they are done, let them cool for 10-15 minutes and they will become more firm after cooling.
  • The type of protein powder will change the taste slightly, especially if you use a different.
